![]() A great breakfast recipe that can be made ahead and frozen, then reheated in the microwave when needed! If you have left-over oatmeal another great recipe is my Make-Ahead Oatmeal Cups.In a small bowl combine flour, old-fashioned oats, brown sugar, baking powder, and cinnamon.The best part is how easily the muffins just pop right out! They also look so pretty too and would make a great muffin for a special breakfast or brunch. Just place the tray on a baking sheet and fill the wells. I'm in love with this new Silpat muffin tray because it's so easy! There is no need to grease the tray or use muffin papers. Instead of walnuts, you could also use pecans if you prefer. I like to use currants in muffins instead of raisins because they are smaller they tend to work a bit better in a muffin. Step#3: Fold in your mix-insĪdd the apples, currants, and walnuts and gently fold them into the batter. This will assure they will be tender after they are baked. Or you could also use freeze-dried apples too! Be sure to cut your apples into a small dice. For a sweeter apple though you could use gala apples. I like to use Fuji apples for these muffins because I like a little bit of tartness. I like to mix my muffin batter with a whisk, I find it's a more gentle way to combine the dry and wet and prevent over-mixing. Then add the dry to the wet, mixing in a little at a time in thirds, until combined. In a medium bowl whisk together the dry ingredients. If your brown sugar has hardened you can soften it up by placing it in a microwave-safe bowl and microwaving it at 5-second increments until it's soft. How to Soften Brown Sugar That Has Hardened The brown sugar gives these muffins such a wonderful flavor, deeper and richer than regular white sugar.
